Apple Orange Mini Loaves
Dr. Adame's Apple Orange Mini-Loaves
Apples and Oranges actually go great together in baked goods!
These vegan, delicious apple orange mini-loaves make the most of the local apple harvest.
Recipe below. And as always, keep in mind Dr. Adame is not chef or recipe writer. She wings it quite a bit!

Apple Orange Mini-Loaves
Ingredients:
WET INGREDIENTS
2 small apples, finely shredded, with the peel.
Do not remove the peel, so much fiber in there!
Dr. Adame used Fuji Apples from our neighbor Shining Waters Farm
Zest and Juice of 1 Large Orange or several small oranges
Zest and juice of 1 Lime
About 1/2 Cup Maple Syrup
Squirt of Mexican Vanilla (yes, its better!)
DRY INGREDIENTS
2 Cups AP flour (you can also use whole wheat)
1/4 Cup Ground Flax Seed
1/2 Cup Elements Truffles Protein Powder (any flavor, Dr. Adame used the Peanut Butter flavor for this recipe, but any of them will work)
Pinch of Kosher Salt
1 Teaspoon Baking Soda
Sprinkle a mix of ginger, cinnamon, and nutmeg
Optional: Top with Bizcochito New Mexico Spice Blend
Instructions:
Preheat oven to 350 degrees
Grease a pan of 8 mini-loaves. Dr. Adame uses Miyokos Vegan Oatmilk Butter.
Mix all the wet ingredients together.
Mix all the dry ingredients together (except Bizcochito Spice Blend), and then add to the wet ingredients.
Mix until well incorporated, but do not over mix. Overmixing leads to gummy batter.
Spoon the batter into the mini loaf pan.
Sprinkle the Bizcochito Spice Blend (or your favorite sweet spice blend) on top of the mini loaves.
Bake for 25 minutes, until knife or toothpick comes out clean when inserted in the center of a mini-loaf.
Remove from oven and immediately place in cooling rack.
