Basil Pesto Recipe and Meal Ideas

The Doctor does not have a lot of time to spend in the kitchen. So instead of cooking, I mainly assemble Whole Foods Plant Based Ingredients together.

I prepare about 4 cups of Basil Pesto each week and zucchini muffins early in the week to have on hand for easy prep meals.

Basil Pesto

Ingredients: 4 cups fresh basil, 1 cup pepitas or raw pecans (or any other nuts), 1 cup nutritional yeast, 1 whole head of peeled garlic cloves, several green onions, juice of one lime, a bit of olive or white truffle oil, salt and pepper to taste, Optional: 1 jalapeno with seeds/veins removed

Pesto Recipe: In a food processor, blend all ingredients until smooth.

Meal Idea: Zucchini muffins with avocado and jalapenos, Lettuce greens with pesto sunsugar tomatoes, and chia seeds, flavored with lime juice and salt. Cutie on the side.

More Meal Ideas:

  • Use pesto over greens instead of dressing

  • In a wrap with greens and tomato and avocado

  • On Toast with tomatoes

  • On pancakes for a savory style crepe

  • As a dip with raw veggies and crackers
