Blue Zones Challenge: Blueberry Chia Muffins

We challenge our community to try ONE recipe from The Blue Zones Kitchen each week.

Sunday: We will post the recommended recipe.

The following Saturday: We will post photos of the meal on our blog, Facebook, and Instagram . We encourage you to share the results of your challenge on our social media pages.

Blue Zones are communities in the world where people live the longest and have the highest percentage of centenarians. One of the key features of the lifestyle in Blue Zones communities is that their nourishment is primarily whole foods, plant-based.

I chose the Blueberry Chia Muffins recipe because it is simple and uses inexpensive pantry ingredients.

Ingredients and Modifications:

1 ¾ cup spelt flour (whole wheat, gluten-free or whatever you have on hand will work just fine) (I use 50:50 AP and whole wheat flour)

1 tablespoon baking powder

½ teaspoon sea salt

¾ teaspoon cinnamon

½ teaspoon cardamom

3 tablespoons chia seeds (1 teaspoon set aside for topping)

6 tablespoons coconut oil

¾ cup almond milk (oat milk, coconut milk, etc.) (I use oat milk)

7 tablespoons maple syrup

1 teaspoon vanilla extract (I exclusively use Mexican Vanilla from Mila’s Mini Market)

1 cup frozen blueberries

Think outside the box!

You can eat Blueberry Chia Muffins for breakfast or as a snack. Or…..

You can use them for sliders, or coarsely chop them as “croutons” for a salad, or instead of sandwich bread.

I like to top sweet muffins with savory toppings like avocado, mushroom pate, or pesto. Serve with mixed greens, chia seeds, and berries or other fruit.
