Mango Smoothie Bowl with Blackberries

I first had smoothie bowls at a WFPB restaurant in Puerto Rico. Here is my version.

Please remember I am not a chef or recipe writer. I wing it quite a bit.

Ingredients:

  • Approx 2 cups mango chunks (fresh or frozen thawed)

  • 1 scoop natural peanut butter

  • A handful of ground flax seed (Omit if allergic. OK to sub any other nut butter)

  • 1/4 cup oat milk

  • Toppings: Berries, Chia Seeds, Coconut Shreds, Banana slices

Instructions:

  1. In a blender, add the mango, oat milk, flax seed, and peanut butter. Blend until smooth. Add more oat milk or mango chunks to get desired consistency.

  2. Place the mango puree in a bowl and top with fruits, chia seeds, and any other WFPB toppings.

How To Use: This makes a great breakfast, snack, lunch, or dinner!
