Mung Bean Green Mini-Frittatas For St. Paddy’s

Dr. Adame made these green mung-bean mini-frittatas using the Mung Bean Omelette recipe in her Brain Boosters book. Featured below.

She added spinach to the mung beans in the blender for the green color and extra nutritional density.

Instead of cooking the mung bean mixture in a pan as an omelette, she poured into a greased mini-muffin tin. Bake at 375 degrees F for about 30 minutes.
