Simple Friday Night Meal

When the kids were still living at home, Friday nights were pizza and movie night.

Now that Chris and I are empty nesters, our meals have gotten simpler. By Friday nights, I am basically in “scavenging” mode!

I do not really cook “recipes”, I just put together or assemble meals from what I already have on hand. This is where batch cooking comes in handy.

The story behind this meal:

I had avocados on hand (a treat for a Friday!). Chris made steamed rice for his short-ribs that he had going in the slow cooker all day (he is not a vegan!), and the beans were leftovers from Kara’s lunch at home. I topped with salt, lime and Cholula and served with a cutie.

If you do not have avocados handy, you can use any veggies you have on hand. Saute with some garlic or olive oil and top the rice.
