PawPaw-Blueberry Muffins

Ingredients:
3 PawPaws from Hole in the Woods Farm
1/4 cup olive oil
1/4 cup oat milk (or any plant-milk)
1 teaspoon vanilla
1/2 cup raw sugar
1/2 cup maple syrup
2 cups AP flour
2 teaspoons baking soda
1 cup fresh or frozen blueberries
Paw Paw Blueberry Muffins
Instructions:
Preheat the oven to 350°F.
Remove the pawpaw from the skin and seeds, and place one cup of the flesh in a large mixing bowl. Using a potato masher or a fork, mash until it is a smooth consistency.
Add the oil, oat milk, vanilla extract, and maple syrup, sugar and whisk together well.
In a separate bowl, whisk together the flour, salt and baking soda. Combine the dry ingredients to the wet, and stir.
Gently fold in the blueberries.
Grease 12 muffins with coconut oil or other plant-based oil
Divide the batter evenly, about 1⁄4 cup of batter per muffin.
Cook for 25 minutes, or until a toothpick inserted comes out clean.
Let cool for a few minutes before removing from the pan, then cool on a cooling rack.
