What I Eat In A Day: End of Summer Produce
Watch the video for a brief overview of what I typically eat in a week day.
Please note:
I do not count calories.
I only drink water with meals and in between meals.
I do not snack in between meals.
I work from home so have access to my kitchen for all meals.
I batch cook. For example, if I make a sauce for pasta, such as the kale-cashew sauce, I will save portions in the freezer for future meals. In the summer, I make a batch of pesto that typically lasts me about a week.
Breakfast: Ginger shots
Lunch: Siete Brand Tortillas (from Costco) with cashew-kale “alfredo” sauce, topped with tomatoes and chopped habanero peppers and fresh squeezed lime juice and salt to taste , a Cutie, and a small container of Hippeas
Dinner: A scoop or two of pesto topped with chopped tomatoes and habanero peppers and fresh squeezed lime juice and salt, some vegan Crunchmaster rice crackers from Costco, and a Cutie. You can use the microgreen pesto but instead of microgreens use basil or any other greens.
