What I Eat In A Day: April

Watch the video for a brief overview of what I typically eat in a day.

Please note:

  • I do not count calories.

  • I only drink water with meals and in between meals.

  • I do not snack in between meals.

  • I work from home so have access to my kitchen for all meals.

  • I batch cook. For example, if I make a sauce for pasta, such as the kale-cashew sauce, I will save portions in the freezer for future meals. In the summer, I make a batch of pesto that typically lasts me about a week.

What I eat in a typical day, in Spring

Breakfast: Ginger shots

Lunch: Chad’s bagels from Hole in the Woods Farm topped with avocado and spinach pesto, mixed greens with chia seeds and a cutie, flavored with lime juice and salt. All my veggies are from Culver Farmer’s Market except the avocado.

Dinner: Vegan pancakes topped with avocado and spinach pesto, mixed greens topped with homemade hash browns and Cholula sauce. Side of blueberries. Flavored with lime juice and salt.
