Doctor In The Kitchen: Pies, Potato Mash, Greens, Pesto

Left overs are amazing. Chris made these delicious hand pies for Mother's Day and we had left overs for a couple of days. We also had surplus of the potato mash filling, which tasted really yummy reheated on a cast iron skillet.

I prepare about 4 cups of Spinach Pesto early in the week to have on hand for easy prep meals. So I just paired mixed greens, pesto, and chia seed salad with the pies, along with snap peas and a cutie.
