Doctor In The Kitchen: Vegan Toscana Soup and Zucchini Muffins

The Doctor does not have a lot of time to spend in the kitchen. So grateful to have a husband/CFO who cooks. His Copycat Olive Garden Vegan Toscana Soup is one of my favorites. He uses nutritional yeast instead of vegan Parmesan and Beyond Italian Sausage instead of chickpeas.

I love to bake! And I freeze shredded zucchini from our garden in 1 cup portions to be ready to make muffins year round. I usually make these zucchini muffins over the weekend when my son is home from Culver Academies. He loves to eat them as a snack or for breakfast.

And they make a healthy accompaniment to soups and salads instead of croutons or other breads.
