Doctor In The Kitchen: Zucchini Muffins with Avocado and Mixed Greens

The Doctor does not have a lot of time to spend in the kitchen.

I love to bake! And I freeze shredded zucchini from our garden in 1 cup portions to be ready to make muffins year round. I usually make these zucchini muffins over the weekend when my son is home from Culver Academies. He loves to eat them as a snack or for breakfast.

I like to think outside the box with my baked goodies. I do not usually eat breakfast other than oat milk coffee or ginger shots, and I do not snack, so I use them in my meals!

This meal is easy to assemble if you prepare the muffins ahead of time. Just top zucchini muffins with avocado! Add mixed greens topped with chia seeds and serve with your favorite fruit. I flavor the avocado and mixed greens with lime juice and salt.
